Back again and with spring fast approaching I’ve been working hard on my landscaping and gardening but something strange has been happening… my thumb slowly turned green… and then my whole body… and then I kissed my wife and she fell asleep and now she won’t wake up… It’s like it was poison… nah I’m sure she’ll be fine.Â
Truth Disclaimer Moment… I’m a self taught average joe who’s been gifted a superhuman sense for what tastes great and I’m here to share my findings.  Each recipe will feature a minimum of one of the elusive superfoods because what else do you think superhumans consume?  While we wait for my wife to wake up from that green kiss, let me get on to today’s feature, because I’m finally going to cover the Chia Seed as our superfood, and I’m going to hit with you superhumans with not one but three recipes.
Today’s Featured Recipe:  Chia Seed Pudding – 3 Ways!
One guess on today’s superfood (literally just wrote it) the Chia Seed.
This amazing little seed is more than a 90’s fad. Â Pay no attention to the amazing retro gif. Â Let’s get into it before we attract a certain Batman antagonist. Â One possibly dead wife is enough.
The chia seed was initially consumed by the Aztecs and the Mayans. Â It’s been rumored that the warriors of these societies would consume these to help boost performance. Â So many rumors, that some scientists have taken it upon themselves to study the performance enhancing benefits of the chia seed. Â In one such study, a 50/50 mix of chia seeds and sports drink were compared against the sports drink alone and it was determined that there was no loss in performance for the athletes involved, indicating that the chia seed may have been as beneficial as the sports drink to the athlete’s overall performance and endurance. Â Based on this speculative evidence I think it’s safe to assume that chia seeds might have been the secret ingredient in the old super soldier serum. Â
By adding this little seed to your tool belt, you will also be incorporating one of the most nutrient dense foods on the planet into your diet. Â 28 grams of these little powerhouses infuses into your diet 11 grams of fiber, 4 grams of protein, 5 grams of Omega-3 fatty acids in addition to being a reliable source of a number micro-nutrients your growing superhuman body needs. Â Did I mention that this all rings it at approximately 101 net calories per 28 grams?
Pretty damn special if you ask me. Â We also get some unique culinary properties from the chia seed that allow us to do some pretty fun things…. like make freaking pudding (or jams). When wet the seed creates a gelatin like substance. Â This set of recipes takes advantage of that unique quality using it to thicken liquids into a pudding or jam like consistency you can eat with a spoon. Â The reason I want to add this recipe to our family is that it’s (A) quick and easy (2) meal prep friendly (F) a staple of my own personal successes. Â I highly recommend incorporating this into your diet as a fast breaker or even a finisher to fight off those late night cravings.

This recipe meets the standards or can be modified to any of our Nordic, Paleo, Mediterranean and Vegetarian Pillars. Â
Cacao Chocolate Chia Seed Pudding
Ingredients: (Serves 2-4)
- 2 Cups of Almond Milk, Kefir, or 1 Cup Greek Yogurt and 1 Cup Almond Milk
- 1/2 Cup Chia Seeds
- 2 Tablespoons Cacao Nibs
- 1 Scoop Chocolate Protein Powder
- 1/4 Teaspoon Cinnamon
- 1 Tablespoon Vanilla Extract
- 1-2 Tablespoons Maple Syrup
Directions:
- To a medium sized mixing bowl add all your ingredients.
- Stir until well combined.
- Cover and set in your refrigerator for at least 30 minutes. Â Once set is should look like this on your spoon:
- Meal prep tip, portion out into air tight containers. Â These should keep 7 to 14 days in the fridge.
Toasted Almond Chia Seed Pudding
Ingredients: (Serves 2-4)
- 2 Cups of Almond Milk, Kefir, or 1 Cup Greek Yogurt and 1 Cup Almond Milk
- 1/2 Cup Chia Seeds
- 2 Tablespoons Toasted Almond Slices
- 1 Scoop Vanilla Protein Powder
- 1/4 Teaspoon Cinnamon
- 1 Tablespoon Vanilla Extract
- 1-2 Tablespoons Maple Syrup
Directions:
- Preheat a toaster or conventional oven to 400℉.
- Add your sliced almonds to a lined cookie sheet, and toast carefully. Â Here’s a reminder photo of what we are aiming for from a color stand point.
- To a medium sized mixing bowl add all your ingredients.
- Stir until well combined.
- Cover and set in your refrigerator for at least 30 minutes. Â Once set is should look like this on your spoon:
- Meal prep tip, portion out into air tight containers. Â These should keep 7 to 14 days in the fridge.
Peanut Butter and Jelly Time – Chia Seed Pudding.
Ingredients: (Serves 4)
No photos here, sorry gang, and it’s the most complicated of these simple recipes. Â Trust me though you’ll be OK.
- 2 Cups of Almond Milk, Kefir, or 1 Cup Greek Yogurt and 1 Cup Almond Milk
- 1/2 Cup Chia Seeds, and 2 Tablespoons
- 1/4 Cup Peanut Butter (Or your favorite nut butter)
- 2 Cups Fruit of your Choice (Berries, Mangos, or Peaches)
- 1 Tablespoon Citrus Juice
- 1-2 Tablespoons Maple Syrup
Directions:
- In a medium sized sauce pan add your fruit, maple syrup and citrus juice. Â Cook over medium heat until your fruit breaks down into a sauce. This process can take approximately 10 minutes or so.
- Remove from heat and add the 2 tablespoons of chia seeds. Â Mix well and set aside to cool.
- Once cooled divide into four equal portions. Â I use mason jars, seal and place them in the fridge.
SHJ Tip:  If you want you can eat this fruit mixture as is, or use this part of the recipe to replace your store bought jams and jelly for a good old PB&J craving like I do.  If you decide to go this route, I would update the recipe to say add maple syrup to taste, just remember though while maple syrup is a superfood you are adding sugar and calories to your jam, so do it responsibly 😛 - To a medium sized mixing bowl add your remaining ingredients.
- Stir until well combined.
- Cover and set in your refrigerator for at least 30 minutes.
- Take out the mason jars with the fruit, and top each with your peanut butter pudding.
- Place back in the fridge and when it’s time to pop that top. Excelsior and Enjoy!
