Even though I made sure to add a protein shake to our Anime Inspired Workouts (specifically Demon Slayer inspired being that right now you guys are really enjoying this theme), I decided I also want to keep the higher protein trend going for a couple more recipes being that a lot of our Demon Slayer characters are so fond of sweets and had us going off the rails with our calories a bit in the last week or so.
So for this one I'm bringing in Nikujaga, which is Beef and Potato Stew!
This one isn't specifically within Demon Slayer (or at least not as blatantly as some of the others), but I'll tell you how we landed on it below.
Anime: Demon Slayer
Inspiration: One of the things offered to Tanjiro for consistently saving the day and helping people is potato stew (along with other things, of course).
Combine that with the fact that I am making it a point to include more protein (albeit not that much, unfortunately) in these next few recipes for us, and that's how I decided to turn this one into Nikujaga!

INGREDIENTS
- 200-300g of thinly sliced meat
- 1 tsp of sake
- 1 tsp of grated ginger
- Salt
- 1 pack of snow peas
- 1 onion
- 2 carrots
- 4 potatoes
- 1 pack of shirataki
- 300 ml of water
- 2 tsp of dashi
- 3 tbsps of soy sauce
- 3 tbsps of sake
- 3 tbsps of mirin
- 2 tsp of sugar
COOKING INSTRUCTIONS
- Marinate strips of thinly sliced meat with a teaspoon of grated ginger, a couple of teaspoons of sake and a little salt.
- Mix it so it is all coated and set it aside for later.
- Blanch snow peas for 1-2 mins and chill in an ice bath to stop the cooking process. Set aside (we will top with them in the last step).
- Par-boil the shirataki noodles for 3-6 minutes and rinse them.
- Rinse off your potatoes, peel them and cut into quarters.
- Peel carrots and cut into smaller pieces. Cut the onion into larger wedges.
- In a large bowl mix together 300ml of water with a tsp of dashi, 3 tbsps each of sake, mirin, and soy sauce and two tsp of sugar. Give that a mix until the dashi and sugar fully dissolves.
- Heat a pressure cooker with a little vegetable oil and briefly brown the meat.
- Once the color has turned, add in the root vegetables & shirataki. Saute and add the onions on top.
- Pour it all in over your sauce.
- Seal it and let it come up to pressure.
- Cook under high pressure for 5 mins.
- After 5 minutes or so, release the pressure and serve in a large bowl.
- Top with blanched snow peas.
